Indian Masala omelette recipe is all time favourit breakfast, lunch or even dinner. A spicy Indianstylemasala omeletteis apmped up with tangy tomatoes, crunchy onions, green chillies and a few essential spices like turmeric and red chillies.

Masala omelette is the easiest meal on go for me and mostly serve it up with a side of veggies either stirred or simple green salad. when I am feeling more indulgent, A crispy paratha along with it serves the purpose alright. If youadd vegetables, spices, and cheese of your choice as stuffing or filling it tastes even better.

The Indian masala omelete is a spicy version of the classic omelete recipe. It is an Indian twist on a regular omelette but with spices, onions and tomatoes. There are so many variations of adding different ingredients. A few of the masala omelette variations I am going to share below.

Masala Omelette Ingredients

  1. Eggs
  2. Ghee/Butter
  3. Onions
  4. Tomatoes
  5. Coriander leaves
  6. Green chillies
  7. Salt to taste

Optional Ingredients

If you want to make a stuffed masala omelette you can use either of these ingredients other than the above-mentioned ingredients.

Stuffings for Omelette

Grated cheese, mushrooms, bell peppers, shredded carrots, zucchini, onions, spring onions, green chillies are common fillings that can be added to Indian masala omelette.

How to Make Masala Omelette

  1. To make masala omelette break two eggs in a bowl.
  2. Add chopped onions, tomatoes, green chillies, salt and whisk it well to form a foamy well-beaten egg batter.
  3. Heat a cast-iron skillet or non-stick pan. I prefer a cast-iron skillet for making omelettes for the perfect texture and easy handling.
  4. Add ghee/butter or oil and allow to heat for a few seconds.
  5. Pour prepared egg batter into the skillet and cook for 2 minutes on medium heat.
  6. Drizzle some oil on the sides of the omelete in the skillet and flip it to cook from the other side as well.
  7. Indian masala omelette is ready.

Masala Omelette is Different from Stuffed Omelette

In a stuffed omelette, the stuffings are made separately and the omelette is cooked separately. But Masala omelette is different from stuffed omelette in the sense that you add lots of filling inside the omelette batter, chopped onion, green chilli, and lots of other spices and herbs which makes it more flavourful.

Another thing that differentiates Indian masala omelette is that the eggs are slightly more cooked than the regular omelette. Eggs in Indian style masala omelette are cooked till a slight crust is visible outside.

Masala Omelette Varaiations

  • Indian Masala Omelette: In the simplest and most common omelette recipe, you add chopped veggies like onions, tomatoes, green chillies and seasonings to the batter itself. Then you make an omelette with this batter.
  • Stuffed Masala Omelette: If you are planning to use lots of veggies you can just add chopped onion, green chilli, and seasoning to the omelette batter. Saute the vegetables of your choice and keep them aside to use as stuffing or topping. Make masala omelette as mentioned above and place sauteed vegetables and fold it.
  • Cheese Masala Omelette: You can make a basic masala omelette and stuff that with cheddar cheese or a mix of your favourite cheeses.

So, if you want to jazz up your basic omelette for something more flavorful, this recipe of Indian masala omelette is a perfect way to start the morning with a hearty Indian breakfast.

How to make the perfect omelette

In case you are wondering How do restaurants make such fluffy omelettes. Here are a few things to keep in mind.

  1. Chop the vegetables evenly, take your time, it makes an evenly cooked omelette filling and makes it tasty.
  2. Whip the eggs with an electric beater and whip them till it forms soft peaks. The aim is to incorporate enough air in the batter to ensure ample fluffiness.
  3. I Used grated mozzarella cheese. You can also go for goat cheese, cheddar or blue cheese if you have any.
  4. Feel free to add other herbs of your choice. The simpler the recipe, the better taste. I suggest not be over ambitious with simple recipes.

Recipe Notes- My Tried & True Tips

  1. Start with good quality fresh organic eggs as far as possible.
  2. Do not add too many fillings in omelette batter. That will make it slightly difficult to fold and breaks easily.
  3. For making an omelette either use a cast-iron skillet or a non-stick pan which makes it easy to flip and forms a perfectly cooked crust that comes off easily.
  4. Unlike classic omelette that has a custard-like consistency and is yellow in colour the Indian masala omelette is slightly more cooked and has light brown spots on it.
  5. Always cook masala omelette on medium to low heat for perfect texture that is soft inside and perfectly formed crust outside.

You can serve masala omelette by itself along with a cup of masala chai. Or enjoy it with a toasted bread of your choice. I sometimes stuff it in toasted buns to make bun omelette or Indian style bread omelette.

Ingredients

  • 8 Eggs good quality fresh organic eggs taste better
  • 2 tablespoon Oil
  • 2 tablespoon butter
  • 1 onion medium sized chopped
  • 3-4 green chilli finely chopped
  • 2 teaspoon red chili powder
  • ¼ teaspoon turmeric powder
  • Salt to taste
  • 3-4 leaves Tbsp Coriander chopped
  • 80 g cheddar cheese processed cheese if you don’t have cheddar

Instructions

  • Break all the eggs in a bowl and whisk them lightly for 2-3 minutes until slightly frothy.

  • Add chopped onion, green chili, turmeric powder, red chili powder and salt along with coriander leaves and mix everything to make masala omelette batter.

  • Heat ½ tablespoon of oil and ½ tablespoon of butter in a non-stick pan.

  • Pour ¼th of masala omelette batter in the pan and cook till light brown spots start to appear on the edges. Loosen the edges with a rubber spatula and flip the omelete.

  • Cook for 1- 2 minutes on medium heat and flip it again. Sprinkle 20g of cheese on this and gently lift one edge and fold it over.

  • Masala omelet is ready. Serve it up with toasted bread, crisp paratha or a simple green salad for a wholesome meal.
