Fettuccine alfredo can do no wrong. Such a beloved Italian pasta dish; the white sauce and fancier version of the most comforting pasta dish, mac and cheese! Thankfully, by using some gluten-free fettuccine noodles, even we celiac folks can enjoy this classic dish! Why is any dairy-dominate dish always so comforting? It's not that hard to figure out it has something to do with the high-fat content, cream, and cheese! Not vegan, not dairy-free, but if we're making gluten-free fettuccine alfredo from scratch...why not make it allergy-free and a whole lot lighter while we're at it?
Let's clear some things up before we dive into the yummy details!
Does alfredo sauce contain gluten?
A traditional alfredo sauce should be gluten-free unless it was thickened with wheat flour or starch. It does contain cream, butter, and parmesan cheese. So it's not dairy-free nor is it vegan and safe for those with allergies. Typically dairy-free and vegan alfredo sauces contain cashews (nuts) or tofu (soy). This is why I created this ALLERGY-FREE vegan alfredo sauce recipe!
Is there gluten-free fettuccine noodles?
Of course! We're no longer living in the dark ages of yesteryear. A simple, readily available in your local grocery store option would be Barilla's Gluten-Free Fettuccine. Other gluten-free and allergy-free options like Tinkiyadi Brown Rice Fettuccine and The Only Bean's Black Bean Fettuccine work as well!
A quick and easy meal
Pasta dinners should be an easy go-to, even when they require a homemade sauce! My vegan alfredo sauce can be prepared ahead of time and literally takes 5 minutes! The only thing you need to do is boil up a pot of gluten-free fettuccine, which takes about 10-12 minutes (depending on the brand!). You may come home from work, hungry, short on time, and with an army of other hungry mouths to feed, but you have this delicious solution to save the day!
How to make gluten-free fettuccine alfredo
- Boil a pot of water, add your gluten-free fettuccine noodles.
- Blend up your allergy-free alfredo sauce.
- Drain your pasta, add it back to the pot.
- Pour in the blended sauce and mix everything around!
It's that easy! Of course, don't forget that sprinkle of parsley to make a white and beige dish a little prettier!
A healthy twist on fettuccine alfredo
Just because this is a healthy, lightened-up recipe doesn't mean it tastes healthy (whatever that means)! This gluten-free fettuccine alfredo recipe is:

It is so creamy and still such a comfort food dish! Everyone loves pasta and dressing it with a rich white sauce that just so happens to be free from any major allergens and actually nutritious won't change a thing! (I dare you to see if your family can tell!)
What to serve fettuccine alfredo with?
Carb dominates meals always stump me with what to serve along side them. When in doubt a vegetable side dish will do just the trick!
- An easy simple salad
- Cucumber salad
- Brussels sprouts, Broccoli, Broccolini, MORE Cauliflower
- Simple slaw
- Garlic bread (okay...not a vegetable, but this IS Italian food!)

Ingredients

- 1 Box (12oz) Gluten-Free Fettuccine Noodles
- 1 Batch of Homemade Vegan Alfredo Sauce
- Fresh Parsley (to top, if desired)
Instructions
- In a large pot, boil your gluten-free noodles according to package directions, drain (save some of the pasta water), and add back to the pot.
- Prepare and blend your homemade alfredo sauce while the noodles cook.
- Pour the sauce, gradually into the hot cooked fettuccine and mix well to coat the noodles.
- If the sauce is too thick, thin it out with the reserved pasta water.
- Serve and top with fresh parsley!
Notes
*The homemade alfredo sauce makes about 4 cups. Use more of less depending on your preferences. 3-4 cups of sauce is more than enough for 12oz of pasta.
